Taleggio is a cheese which has ancient origins, perhaps before the 10th century. Documents dating back to 1200 refer to the trade of this typical cheese along with other cheeses. Taleggio has always been associated with the Valsassina area, where in dialect it is also known as stracchino quadro or stracchino nostrano.
The Valsassina Valley has been famous for the production of this particular cheese since the 19th century, and in particular for it’s seasoning. The art of cheese making together with some secrets have been handed down from generation to generation until today. Taleggio is the main product of the cheese-making tradition of our Valley, where the presence of natural caves with their favourable microclimate, have given this cheese the unmistakable flavour and unique aroma that have contributed to the success of Taleggio around the world.
Taleggio is a protected designation of origin (P.D.O.), whose typical characteristics are guaranteed by the Consortium of Taleggio and product conformity is certified by CSQA.
