To produce goat cheese with a sweet, delicate and exclusive flavor, we selected goat's milk with the highest possible qualitative standards and microbiological guaranteed characteristics that we acquire in modern farms managed in a rational way and raised in view of our dairy business, where the feeding is controlled and balanced, with goats living in full health in the wildness in well delimited plots, where animals are fed on herbaceous pasture naturally complemented by precious natural forage prepared in the troughs.

PRODUCTION

Goat's milk is directly transformed coolness with traditional methods in a modern, well equipped dairy farm with a processing entrusted to the expert hands of the artisan cheese maker.

MATURATION

The stage of goat cheese maturation is made in the historical natural caves of '800 carved into the mountain, attached to our office of Introbio. The maturation is favored by the action of natural microflora and microclimate developed by natural currents of moist air that flow through the stone walls of the caves.

From the beginning, without compromise, we chose to produce only cheese all strictly with 100% goat milk to meet the needs of people intolerant to cow's milk.
